Why she&#8217;s singing and dancing with my mother (far left) is anybody&#8217;s guess. She was Carolyn Vinson Nespoli&#8217;s mom, and when we were growing up, every time Carolyn was responsible for bringing a dessert or a dish to something, she always got her mom to make prune whip. Everybody loved it. (My mother&#8217;s &#8220;thing&#8221; was brownies.)<\/p>\n\n\n\n<p>The only thing I didn&#8217;t like about Mrs. Vinson&#8217;s prune whip was the name. It was almost as if they had focus-grouped a bunch of teenagers in the 1960&#8217;s and asked them, &#8220;What&#8217;s the grossest name for a dessert you can think of?&#8221;<\/p>\n\n\n\n<p>But like I said, everybody loved it&#8211;and her.<\/p>\n\n\n\n<p><strong>Ingredients<br><br><\/strong>&nbsp;4 egg whites beaten<br>&nbsp;8 T sugar<br>&nbsp;1 cup unsweetened chopped cooked prunes (I guess it&#8217;s possible<br>&nbsp;&nbsp;&nbsp;&nbsp;that such thing exists.)<br>1\/2 cup chipped nuts<\/p>\n\n\n\n<p><strong>Instructions<br><br><\/strong>1. &nbsp;Beat eggs, mix in sugar<br>2. &nbsp;Add prunes and nuts.<br>3. &nbsp;Bake at 350 degrees until brown.<\/p>\n\n\n\n<p>Serve with whipped cream.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"404\" height=\"640\" src=\"http:\/\/mattisch.com\/wp-content\/uploads\/2022\/10\/MMAnneFriends.jpg\" alt=\"\" class=\"wp-image-252\"\/><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>Lib Vinson is one of my favorite people in the world. ?That&#8217;s her in black on the right side of the photo above.
