Lib Vinson’s Prune Whip

Lib Vinson is one of my favorite people in the world. ?That’s her in black on the right side of the photo above. Why she’s singing and dancing with my mother (far left) is anybody’s guess. She was Carolyn Vinson Nespoli’s mom, and when we were growing up, every time Carolyn was responsible for bringing a dessert or a dish to something, she always got her mom to make prune whip. Everybody loved it. (My mother’s “thing” was brownies.)

The only thing I didn’t like about Mrs. Vinson’s prune whip was the name. It was almost as if they had focus-grouped a bunch of teenagers in the 1960’s and asked them, “What’s the grossest name for a dessert you can think of?”

But like I said, everybody loved it–and her.

Ingredients

 4 egg whites beaten
 8 T sugar
 1 cup unsweetened chopped cooked prunes (I guess it’s possible
    that such thing exists.)
1/2 cup chipped nuts

Instructions

1.  Beat eggs, mix in sugar
2.  Add prunes and nuts.
3.  Bake at 350 degrees until brown.

Serve with whipped cream.
